I’m trying to install Hosted Messaging solution in a production environment and have a question about the part Secure Active Directory. Deployment walkthrough tells me to remove Authenticated
User group from the Pre-Windows 2000 Compatible Access group in order to apply correct security by MPS. I’m little bit worried about the impact of this in my production environment, are there any impact?
Is it possible to skip this and just remove this group from on the hosting OU instead?

Who knows your "production environment" better than you??? How can we estimate "any impact"???
Just reproduce your "production environment" in lab and see what happens.
P.S. Do not mix security principals (groups) and AD administration objects (OU).
