I wuold like to create and manager a new Category, where I can insert a products list with: Product, category, details table, image, external file link ... and see all products in a table! (only a specified products category or all products) Is it possibile???

It is possible, but you'll need to write a module to support it. You can probably adapt a new module based on one of the existing modules (links or photogallery). You'll have to write your own sort/filter functionality too.
