for continued support, you have 3 months to convert. core 2.2 support ends 90 days after the core 3.0 release. as 3.1 (which is due in nov.), is the LTS release, you will again have 3 months to upgrade to 3.1 after its release. as 3.1 is a LTS release, its
supported for 3 years.
note: core 2.1 was the last LTS release, and is supported till aug 2021

as far as I see net core 3.0 is official now.
should I / can I convert my 2.2 project to core 3.0?

That's the recommendation. Upgrade to 3.0 then to 3.1 in Nov for LTS support.
