My company planning to develop a new product soon. I suggested them use
MVC Core instead of MVC 5 as MVC Core is latest one and also Microsoft roadmap for MVC core is really good.
Just I wanted to confirm that Is there any applications developed and in production using MVC core? If so, list them.
And also please correct me if my recommendation is wrong.

Both frameworks will still be supported in at least 4 years. Both frameworks have an MVC approach to coding and both use a very similar Razor templating language.
If you want performance and want to be on the leading edge of technology i would say ASP.net Core.
If you are looking for something that is tested and has been running major websites i would say MVC 5

I have a few small web applications in prod and few ~large open source projects based on ASP.NET Core. I can say that I really like it and I will go with the ASP.NET Core on the new projects in the future. The only reason you should considering using "old"
ASP.NET MVC is some code base you want to use or incompatible libs...

I would recommend MVC Core. I also recommend Angular 2 as the presentation layer. In my belief MVC Core + Angular 2 will become the defacto standard for .NET web developers.
If you develop now in MVC 5, then upgrading to MVC Core is not an obvious task. Depending on how you code, you may have to spend significant time in upgradation.
I have been working on .NET Core from it betas (about an one and year). I deployed 2 medium to large applications into production. These are internal applications hence I cannot give those links.
