We plan to use Windows Server 2012 Standard for hosting our ASP.Net/SQL Sever Web App.
If we use a Virtual Machine, what OS do we require?
I read that Windows 7 should not be used for production loads. If true, will we need to use a Windows Server OS for our VM?

You can install window server 2008 to run your Asp.Net applications. It is provide complete server level security and good for Asp.Net web hosting.

That base on your detail requirement.
If you want install SQL Server, you need to check the requirements of that SQL Server.
For the ASP.NET application, you should check which .Net Framework version needed and for this .Net Framework, it has the detail requirements. (E.g. For .Net Framework 4.5, it needs windows 7 sp1 and so on.)
On the other hand, in my opinion, you’d better use the Windows Server OS.

For ASP.NET, you better use windows server. If you unsure how to setup it, you can find
shared hosting provider that offer ASP.NET
