My data models may changed greatly on my project, so I was wondering if I want to remove a fully scaffolded model, view & controller, can I just delete the files before initializing any data?

Is this a Dynamic Data project or a pure MVC PROJECT.

It is an MVC 4 Application. I am creating an employee orientation site, where the orientation content is customized for each employee depending on their job. Each employee will "step" through the content.
Content will consist of modules (Benefits, Payroll, Safety, etc.), each containing PowerPoint slides with audio, videos, quizzes, and forms. There will be a progress bar marking orientation progress and completion. Also an admin area to create new content,
and monitor employee progress and provide help.

Yes, you can delete the controller, and all related views (view folder). When you create a controller and/or views it does not do any other thing to your MVC project.
