I'm trying to figure out how to use IIS 7's URL Rewrite module to redirect a specific URL to another specific URL, namely:
OLD URL: http://www.test.domain.com
NEW URL: http://www.domain.com/subfolder
I have other rewrite rules such as canonical domain name for the same website so I'm not sure if this is interfering with what i'm trying to accomplish
Any idea how to either do it through the GUI or in the web.config file itself?

There are some really good pieces of information about URL Rewrite here:
Are you redirecting the request from the requested URL to a new one or do you want to rewrite the URL to look like the one you mention as the NEW.
A redirect will result in an HTTP 302 Status, but a rewrite would not.
You can use URL Rewrite for both options, but if you simply want to redirect you can use the HTTP Redirect module in the IIS Management Console or place a Response.Redirect in the requested file.
