We are currently using Visual Studio 2003 but are thinking about upgrading to either VS2005 or 2008. Does anyone know if VS2003 will be supported by MS much longer? Is it best to upgrade to VS2008 and skip 2005?

I don't know how long MS will support VS 2003 but it makes you life alot easier to change to VS2008. In my opinion skip the Version of 2005 because in 2008 you can still develop solution like in 2005 and think about the new features link LINQ, WPF, Silverlight
and and and...So get rid of the old VS...

You should be able to open VS 2003 project in VS 2008 as 'Web Application' project.
