Before starting to think about a solution.
1. Do you realize that all the job will be done on server machine - not at the client (because there is an website as I can see - and wordapplication can't be started at client from server code) - Your code just start the word exe on web server.
2. IDataObject is a Windows.Forms class (exists in .net 1.1 in System.Windows.Forms.Clipboard) - because on web - the client "clipboard" can't be accessed by the server code - so, it's usseles on web developement.
3. To solve somehow your problem - why you want to use selection.copy, when you can directly use
oc.ActiveWindow.Selection.Text - Console.WriteLine(doc.ActiveWindow.Selection.Text ); - but you must understand that the console part will be done on server machine (same as client in developement) - but this won't happen if you will publish

You were absolutely right, but Selection.Text won't give images and other object types exist in word file. This will only give text.
So, what should we do to get the Clipboard data as it is not present in 2.0.
