WebMatrix is an IDE (Integrated Development Environment)
Web Pages vs Web forms in the context of asp.net are the same thing. Did you mean Web Forms vs MVC?
For the first question, there is no real performance boost in using one over the other. MVC essentially is Model View Controller but is still essentially asp.net.
The second question, both handle data quite nicely but each has its own way. I would recommend going with asp.net forms. MVC gives a more modular method of developing but the learning curve is a lot higher.
For the third question, tools generally dont' impress the supervisor, good solid code techniques do.
