It is not a datatype, it is a property. So you won't find it in the drop down where you select int, varchar, etc.
If you are using Sql Management Studio, go to the "design" screen (or "modify", depending on your version) for the table you wish to declare an identity. When you select a specific column, you have a couple options like datatype and allow nulls. Below,
you should see "column properties". This is where you can find identity specifications. Expand it (if your version requires you to do so) and set the "Is Identity" property to "yes".
