I regularly deploy my updates in a very slow methodical manner. The source code, I might copy across file by file.
Then I update each individual SQL Procedure that is created or updated, changes to SQL tables etc.
Doing maintenance work on existing websites I copy the live stuff to my development server and build from there.
There is loads of room for mistakes in this method, and I would like to automate as much as possible, even if I have to code those automation procedures myself.
The automation should also take back ups of any live stuff befure updates are made.
I would still like to be able to break these updates down into small testable chunks where compex updates are made.

I think you can create a webform programe.
And this programe will have some function below:
1. One key backup.
2.Update codes Unit test. etc...
I'm not familiar with your bussiness.
But I still support you use automation tool to your job.
And you can use Araxis Merge to compare old version file and new version file.
Hope it helpful.
