Anyone running this combination? Any advantages? Also I haven't checked this but has anyone run WSS 3.0 on Windows 2008?

I dont think there will be any specific advantages of running WSS 3.0 and MS SQL 2008.

Assuming you're a Sharepoint Hosting Service (The forum you posted in...) the answer is yes, plenty of advantages. Though really they are the same advantages of any hosting service using SQL2008. Same goes for Windows 2008 and IIS7, many advantages for hosters exist on this platform. Check Microsoft's hosting resources for guidelines on optimizing these.
